About Cal-Italia Cal-Italia is a North County San Diego mobile wood-fired pizza company specializing in catering and events. North County Roots Founder Chase Burke was born and raised in Encinitas and worked in local pizzerias before earning a bachelor’s degree from Cal State San Marcos. He later studied pizza-making in Costigliole d’Asti, Italy, under Nicola Gaudino and became a certified pizzaiolo.
